Pioneer Pancakes! You can add your favorite berries!

One of my families easy & favorite foods for our Sunday mornings is pancakes! You don't need a lot of ingredients! Organic if possible is recommended. 


Ingredients: 

  • Flour (Organic) 1 1/4 cups 
  • Room Temp 1 Butter Stick 
  • 2 Eggs *I prefer brown eggs, which is free ranged if you don't have your own hens*
  • Milk or Half & Half (200 ml) 
  • Your favorite berries 
  • Your favorite syrup 
  • Self raising flour (Organic) 
  • White Sugar (2 tbsp) 
  • 2 tsp vanilla 


Mix the dry ingredients, then add all other items. I use a metal whisk and don't over mix! Just enough where it looks as all the ingredients are married :)  In the meantime, get your favorite non-stick flat pan on medium heat for a few minutes, by this time the pancake is doing its thing and working chemistry! 


The few minutes are up, poor just enough on the pan for the size of pancake you want. Don't walk away from the pan stick around it won't take long before you need to flip it over. Does, the corners look more round and starting to lightly brown and bubbles of the pancake mix is showing up evenly? Yes, good then flip the pancake with your utensil. I hope the other side is a golden brown! Ok, you are almost done with cooking your fluffy pancake. A few more minutes then Wala (not sure if this spelling is correct :)! 


Put the pancake on the plate, add butter right away and top off with your favorite syrup flavor. The pure maple syrups have great iron nutritional value, and the other have corn syrup and is not healthy for you. 


So, be mindful for this as well if it matters to you.  


*FUN FACT*  The Chefs from hundreds of years ago before baking soda existed, they would add fresh snow to improve their pancakes for more fluff!

Prairie Nurse Sassy Salsa!

Salsa Party or Side Dish/Snack

Sassy Freedom Salsa!

 Here's to Freedom, Liberty and Justice for ALL! This is a fast & easy super healthy treat with your street taco or chips or summer backyard party. 

The nutrition is high with all the flavors to cure your cravings! 


Ingredients:  

Strawberries, Mango's, Red Onion (even though to me it looks purple :) Jalapeno, Cilantro, Lime & Vinegar (add the ratio you prefer). 

Other options (pineapple, blueberries, watermelon or peaches).  


Directions: 

6 Strawberries (diced) *Small enough to fit on chips* 

2 Mango's (diced) 

Half Red Onion (very minced) 

1/2 Jalapeno depending on your hotness (very minced) no seeds *careful not to touch them* 

Cilantro (few sprigs, remove stems try to mince the leaf part) 

1 Lime (Use half after cutting squeeze over the salsa) 

1 tablespoon of white vinegar 


Nutrition Value Level: Highly Awesome!

Strawberry Party!

Prairie Nurse Strawberry Moon Oatmeal Bars Recipe: 


Good Stuff Filling: 

3 Cups Strawberries (wash and dice) 

3 TBSP of Local Honey (if possible)

1/2 tsp vanilla (real stuff, its the bomb) 

1 TBSP lemon juice or lime 

1 TBSP flour (whichever type you like) 


Dry Crust/Crumble Fun: 

2 Cups Oats

1/2 cup Flour (whichever type you like) 

6 TBSP butter salted, that way you don't need to add salt later, softened room temp or melted

1/4 cup brown sugar 

1 egg, (break and mix) then add to batch 

2 tsp cinnamon (organic non-GMO) 

1/2 tsp vanilla (real stuff, its worth it) 


Preheat oven 375 F 


Use 8x8 inch baking pan with parchment paper or you can use butter or olive oil and rub everywhere inside the pan prior to adding the ingredients and before baking. 


Large bowl, mix dry crust/crumble fun ingredients together, save just 1/2 cup this mixture for later. Then add the crust ingredients to the prepped 8x8 dish. Then scatter half the strawberry good stuff filling over the top of the crumble fun, add a little sprinklers of lemon juice over it and sugar or honey. Then add the rest. Get your handy dandy oven gloves and put those beautiful gloves on and put the 8x8 baking pan in the oven. 


Bake for 35-40 minutes. Set a timer! It should look bubbly and dreamy. When its done let it set on a wire rack and cool completely.  


If your feeling dangerous, add some whip cream to it!
